One of my greatest obsessions are beautiful desserts and binge watching The Great British Bake-Off and learning how to make them. After creating recipes with Ideal Protein packets for 7 months, I wanted to take what I’ve learned and attempt an IP Swiss Roll! A Swiss Roll is a sponge cake roll filled with either whipped cream, jam or icing. After playing around in the kitchen and 2 failed attempts, I finally perfected this IP Swiss Roll and it turned out even better than I could have imagined! With the spirit of Mary Berry, I hope you make this recipe and savour every moment of the delectable sweetness!
Sponge:
6T liquid egg whites beaten to velvety texture (right before stiff peaks)
Then Add:
1tsp baking powder
1/2tsp baking soda
1/2tsp cinnamon
1tsp olive oil
1tsp water
1 Chocolate Drink Mix packet
Combine lightly
Spread as thinly as you can on olive oil greased baking sheet in a long rectangle shape.
Bake for 10 minutes on 350 degrees Fahrenheit
Filling:
1 Vanilla Pudding Mix
4T liquid egg whites
2T cold water
1T Walden Farm’s Caramel Syrup
Combine all ingredients and mix with an electric hand mixer until light and fluffy. Place in the refrigerator to chill until the sponge is ready.
As soon as the sponge comes out of the oven, place a clean towel over it and gently roll into a Swiss Roll. Let completely cool. Unwrap and add filling evenly across the unrolled sponge, reroll gently as to not squish out the filling, chill, drizzle with more Walden Farm’s Caramel Syrup, slice…Enjoy!
